Cantonese-style crispy omelette, otherwise known as egg foo yong, is a simple dish that can be found in any Hong Kongese household or at high-end restaurants. They’re versatile, incredibly delicious, and great to include in a spread of Chinese dishes. Make omelettes, but the Cantonese way, with our omelette recipe.

Ingredients

Sauce:

  • 4 tsp of cornflour
  • 1 ½ tbsp of light soy sauce
  • 2 tsp of oyster sauce
  • 2 tbsp of Shaoxing wine
  • ½ tsp of sesame oil
  • 250ml of water
  • ¼ tsp of white pepper

Omelette:

  • 6 eggs
  • 220g of bean sprouts
  • 4 shallots, sliced
  • ¼ tsp of salt
  • ¼ tsp of white pepper
  • 120g of shrimps, peeled and deveined
  • ½ tbsp of vegetable oil
  • 1 tsp of sesame oil
  • 1 clove of garlic, chopped

Omelette Recipe

Directions

  • In a bowl, mix cornflour and soy sauce.
  • Add oyster sauce, Shaoxing wine, sesame oil, water, and white pepper. Mix until well combined.
  • In a saucepan, pour in the sauce and bring it to a light simmer for 1 minute over medium heat. Remember to stir constantly.
  • Once the sauce has reduced and thickened into a syrup consistency, remove from heat and set aside.
  • In another bowl, crack and whisk the eggs.
  • Add bean sprouts, shallots, salt, white pepper, shrimps, and mix.
  • In a pan over medium heat, add the vegetable and sesame oil.
  • Add the chopped garlic and sauté until fragrant.
  • Pour a quarter of the egg mixture into the pan. In each batch, use a spatula to push the edges in, forming a round shape.
  • Cook for 1 minute on each side until golden brown. Repeat with the rest of the egg mixture.
  • Transfer the omelette to a platter, ladle the sauce over, and serve!
