Ingredients

  • 350g spinach, washed and cut
  • 1 salted duck egg
  • 2 tbsp oil
  • 1 tbsp garlic, minced
  • 150ml chicken stock
  • 1 preserved thousand-year egg
  • 1/2 tsp white pepper
  • 1 tbsp water
  • 1 tsp cornstarch

Spinach Recipe

Directions

  • Wash the spinach. If large, chop the spinach in half.
  • Boil the salted egg for 10 minutes. Remove, peel and dice the egg after boiling.
  • Peel and dice the preserved thousand-year egg.
  • In the frying pan, heat oil and add minced garlic. Fry until fragrant. Add the spinach and stir fry for a minute. Transfer the vegetable to a plate.
  • Mix the chicken stock, salted egg, and preserved egg in a pot. Bring to a boil. Once the eggs disintegrate, lower the heat and cook for two minutes. Season with white pepper.
  • Mix the water with the cornstarch in the small bowl and add to the egg mixture. Stir on low heat until the sauce thickens. Pour the sauce onto the spinach and serve hot.

  • To make the brine, mix 275g salt and 240ml water and boil until the salt dissolves. Set it aside.
  • Carefully insert six duck eggs into a glass jar and pour in the brine. Add crumpled parchment paper on top to keep the eggs submerged.
  • Cover and let them sit in the brine for 30 days.
  • Drain off the brine and store your eggs in the fridge.
