Ingredients
1.9l of water
500g of pork ribs, blanched
2kg of winter melon, rind and seed removed, cut into 2-inch wedges
20g red dates, soaked in cold water
1 tbsp of goji berries, soaked in cold water
1 tsp of salt

Directions
In a pot, add water and bring it to a boil.
Add in the pork ribs, winter melon wedges, and red dates.
Turn the heat to medium, cover with the lid, and let the soup simmer for an hour.
Once the pork is tender, or the winter melon is translucent, add goji berries and salt.
Stir to mix all the ingredients.
Bring the soup back to a boil, then turn off the heat.
Ladle into a bowl and serve.
