The thighs, covered with salt, are stored in environments with particular climatic conditions. The drying phase is followed by a seasoning phase for at least 14 months, in accordance with the technical specifications defined by the regulations of the Parma Ham consortium, in compliance with European legislation. At the end of the seasoning, the hams are individually marked under the supervision of an inspector from the third party control body in charge. The finished product is marketed as it is or subjected to further processing within hygienically controlled environments: deboning, forming and slicing
