Ingredients
For curry paste
- 2 stalks lemongrass, thinly sliced
- 4 cloves garlic, minced
- 2 shallots, peeled and finely chopped
- 5g ginger, minced
- 10g curry powder
- 2.5g ground turmeric
For curry
- 2 tablespoon oil
- 8 chicken parts (preferably thighs, skin-on
- 3-4 small-sized potatoes, peeled and quartered
- 1 cinnamon stick
- 2 star anise pods
- 375ml coconut milk
- 125ml chicken stock
- Salt and sugar to taste

- Mortar and pestle
- Large dutch oven
Directions
- Using a mortar and pestle, crush lemongrass, garlic, shallots, and ginger. For this step, you can also use a food processor, but we recommend mortar and pestle for a richer and more authentic taste.
- Add in curry powder, turmeric, and 2 tablespoons of oil. Thoroughly coat the chicken parts with the curry paste. Set aside and let marinate for at least 30 minutes.
- Next, heat another 2 tablespoons of oil, fry the chicken, skin side down, until golden in a large dutch oven. Flip the chicken skin side up and add the potatoes. Stir in the remaining ingredients (coconut milk, chicken stock, cinnamon stick, and star anise
- Lower the heat and let it simmer for 1 hour
