Ingredients

  • 2 cans of chickpeas
  • 15ml of olive oil
  • 3 cloves of garlic, minced
  • 180g of a large potato, diced
  • 4g of paprika
  • 1.2g of dried rosemary
  • A pinch of dried thyme
  • A pinch of chilli flakes
  • 480ml of low-sodium vegetable broth
  • Pepper to taste
  • Salt to taste

Chickpea Recipe

Directions

  • Blend one can of chickpeas, including its liquid, in a blender until its smooth like a puree.
  • Heat the olive oil over medium heat in a pot and sauté the minced garlic until fragrant.
  • Add the blended chickpeas and the second can of drained chickpeas, diced potato, paprika, dried rosemary, dried thyme, and chilli flakes. Stir well. Add vegetable broth and stir again.
  • Cover the pot with a lid, increase the heat to high, and bring it to a boil. Reduce the heat to low once it starts boiling, and simmer it for 25 minutes, stirring occasionally.
  • Lastly, season with pepper and salt to taste.
