This Chinese pork chop recipe is inspired by the classic Hong Kong-style baked pork chop rice. A delicious dish with egg-fried rice topped with pork chops, it is drenched in tangy tomato sauce, and covered with a layer of melted cheese. Ingredients

  • 225g of pork loin or pork chops, cut in half vertically

For the marinade:

  • 2g of sugar
  • 2.5ml of Shaoxing wine
  • 5ml of soy sauce
  • 3g of corn flour
  • 1.25g of baking soda
  • 1 pinch of black pepper

For the corn flour slurry:

  • 4.7g of corn flour
  • 60ml of water

For the fried rice:

  • 15ml of oil
  • 700g of cooked rice
  • 3 eggs
  • 30ml of soy sauce
  • 140g of frozen vegetables

For the pork chop:

  • 15ml of oil

For the sauce:

  • 1 and a 1/2 onion, sliced thinly
  • 800ml of canned tomatoes
  • 60ml of ketchup
  • 15ml of oyster sauce
  • 25g of sugar

Other ingredients:

  • 85g of shredded cheese (mozzarella and cheddar mix)

  • 1 large bowl

  • 1 baking dish
  • 1 large non-stick pan
  • 1 oven

Directions

  • Slice the pork in half vertically and marinate it with the sugar, Shaoxing wine, soy sauce, corn flour, baking soda, and black pepper in a large bowl. Set aside.
  • Mix the corn flour and water in a small bowl to make the corn flour slurry. Set aside.
  • Pour 15ml of oil into the large non-stick pan, heat it over medium heat, then add the cooked rice.
  • Break up the rice and add the eggs, soy sauce, and frozen vegetables. Stir fry everything together until the soy sauce coats every grain.
  • Transfer the fried rice to the baking dish and spread it evenly.
  • Pour another 15ml of oil into the frying pan and fry the pork on both sides for 3 minutes.
  • Place the pork slices in the baking dish on top of the fried rice.
  • On the same pan, add the onions and fry until they turn brown.
  • Next, pour in the canned tomatoes and crush them.
  • Add the ketchup, oyster sauce, and sugar. Stir well.
  • Reduce the heat and pour in the corn flour slurry. Boil the tomato mixture until it thickens.
  • Pour the sauce over the pork in the baking dish. Sprinkle the top with shredded cheese and bake it in the oven at 260°C until the cheese is lightly browned and melted.

Tips and Alternatives

To make a delicious Chinese pork chop, remember to marinate the pork overnight and use cheese that melts easily like mozzarella and cheddar. It’s best not to substitute it with other types of cheese to enjoy the cheesy and stringy texture. If you’ve got fresh tomatoes waiting to be used, then go ahead! You can replace canned tomatoes with fresh ones. Feel free to replace pork chops with chicken chops too. You can use chicken breast or boneless chicken thigh for the chicken chops.
