Ingredients

  • 500ml water
  • 200g quinoa, rinsed
  • 1 tbsp coconut oil
  • 150g spring onions, sliced
  • 1 tsp chilli flakes
  • 20g garlic, minced75g carrot, finely chopped
  • 75g carrot, finely chopped
  • 200g green beans, trimmed and finely sliced
  • 230g zucchini, chopped
  • 25g red chilli, sliced
  • 2 tbsp soy sauce

For the garlic sesame dipping sauce:

  • 1 tbsp coconut oil
  • 2 garlic cloves, minced
  • 1 tsp chilli flakes
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • ½ tsp Chinese five-spice powder

Quinoa Recipe

Directions

  • Boil water in a large saucepan and add the quinoa. Cook on medium heat until the quinoa is tender. Uncover, mix the quinoa with a fork and set aside.
  • Add the oil and fry the spring onions with the chilli flakes and garlic until they soften in a frying pan.
  • Stir fry the carrot and green beans for one minute, then add the zucchinis and red chillies and stir-fry for another minute.
  • Stir in the cooked quinoa and soy sauce, and fry until the quinoa is a little crispy on the bottom. Separate into two bowls.
  • For the garlic sesame dipping sauce, add the oil and stir-fry the garlic in the same pan used to fry the quinoa.
  • Remove the garlic and mix with the chilli flakes, soy sauce, sesame oil, and five-spice powder.

  • Cook the quinoa in a rice cooker. Wipe the rice cooker with oil, add 1 cup of rinsed quinoa and 2 cups of water. Stir and press the start button.
  • Toast the quinoa for a minute before cooking to enhance its nutty flavour.
  • Roughly chop the vegetables. They just need to be approximately the same size to cook evenly.
