Quick and Easy Garlic Sauce Eggplants Recipe

Chinese eggplants with garlic sauce, better known as yuxiang qiezi, which means fish fragrant eggplant, is a classic Chinese dish. While you can often find this dish in many Chinese restaurants, nothing beats the homecooked version of this meal. With ingredients that you’ll most probably have at home, here’s how you can make this eggplant recipe.

Ingredients

  • 1 tbsp of spicy bean paste
  • 1 tsp of sesame oil
  • 2 tsp of sugar
  • 3 tbsp of Shaoxing wine
  • 1 tsp of fish sauce
  • 3 Japanese eggplants
  • 2 stalks of scallion, chopped
  • 3 tbsp of cooking oil
  • 110g of ground pork
  • 1 ginger, julienned
  • 10 dried red chillies
  • 4 cloves of garlic, minced

Eggplant Recipe

Directions

  • In a bowl, combine spicy bean paste, sesame oil, sugar, 2 tablespoons of Shaoxing wine, and fish sauce. Stir to mix.
  • Wash the eggplants, and cut them into equal-sized pieces.
  • Separate the green and white portions of the scallions.
  • In a wok, add one tablespoon of oil over high heat.
  • Add half of the eggplant and sear it until browned on all sides. Repeat with the other half and then set aside.
  • Turn the heat down to medium-high, adding the last tablespoon of oil and the ground pork.
  • Let the pork brown before adding in ginger and stir.
  • Toss in the red chilli peppers and minced garlic, and turn the heat back up to high.
  • Add the eggplant and the sauce mixture, the white ends of the scallion, and the Shaoxing wine.
  • Stir-fry everything for two minutes, making sure everything is well combined.
  • Add in the rest of the scallions and stir-fry for another 20 seconds.
  • Transfer to a plate and serve.

Healthier alternative

The conventional method of preparing this eggplant recipe is to sear the eggplants in oil beforehand. A healthier method to soften up your eggplants before preparing this dish would be to steam them. Once they’re soft and slightly squishy, you’re good to go.
