Ingredients

  • 23g of dried shrimp
  • 120ml of water
  • 1 medium hairy gourd
  • 3 to 4 slices of ginger
  • 15ml of vegetable oil
  • 2 cloves of garlic (minced)
  • 1 egg
  • 5ml of oyster sauce
  • 10ml of sesame oil
  • 1.5g of salt
  • 1g of sugar

  • 1 vegetable peeler
  • 1 large frying pan

Hairy Gourd Recipe

Directions

  • Wash the dried shrimp and soak them in 120ml of water for around ten minutes. Drain the shrimp and keep the shrimp water for later. Set them aside.
  • Run the knife along the sides of the hairy gourd to remove its hairs, then rinse it off with water. Next, remove its skin with the vegetable peeler, cut off the stem and slice the hairy gourd into bite-size pieces.
  • Julienne the ginger and set it aside.
  • Pour the vegetable oil into the frying pan and heat it over medium heat.
  • Add the julienned ginger, minced garlic, and dried shrimp. Sautee them for one to two minutes.
  • Next, add the hairy gourd and let it cook for around five minutes.
  • Meanwhile, whisk your egg in a small bowl and slowly pour it into the pan.
  • Then, add the oyster sauce and sesame oil. Mix well.
  • Pour in the shrimp water from step 1, mix well, then season with salt and sugar.
  • Continue cooking until the ingredients are tender.
