Here is our laksa recipe, an iconic noodle dish popular in Southeast Asia. Our recipe is easy to follow, but produces a rich and deep broth with all the essential Laksa toppings. Low in calories, our laksa recipe is friendly for all ages, but you can eat it with sambal if you want more heat.

Ingredients

  • 3 tbsp cooking oil
  • 120g Malaysian instant curry paste
  • 480ml chicken broth
  • 480ml water
  • 2 stalks lemongrass, white part only, pounded
  • 10 tofu puffs, cut into pieces
  • 120ml coconut milk
  • 120ml evaporated milk
  • Salt to taste
  • 400g yellow noodles
  • 100g bean sprouts
  • 10 shrimp, peeled, deveined and cooked
  • 5 fish cakes, cut into pieces
  • 3 hard-boiled eggs, cut into halves

Directions

  • Heat the oil and fry the instant curry paste in the stockpot. Boil the stock on low heat. Add the chicken broth, water, lemongrass, tofu puffs and bring the soup to a boil. Lower the heat and add the coconut milk and evaporated milk. Add salt to taste.
  • Add and boil the noodles and beansprouts in the stockpot until they are cooked. Transfer them to the serving bowls and garnish with shrimp, fish cakes and eggs.
  • Pour the soup and a few pieces of the tofu puffs onto the noodle with a ladle.
  • Serve hot.

Homemade laksa broth

We recommend using instant curry paste in our laksa recipe if you're short on time. If you’re hungry for authentic Southeast Asian flavours, you can make your own laksa broth in three simple steps.

  • Heat oil in a small pot and fry two minced garlic cloves and one 2cm grated ginger. Add one lemongrass stalk and two sliced chillies—cook for 1 minute.
  • Add 175g laksa paste, 1l chicken stock, 400g coconut milk and 2 teaspoons of fish sauce. Boil for 10 minutes.
  • Add lime juice and fish sauce according to your taste.
