Our lotus root recipe features the Korean braised lotus root side dish known as glazed lotus roots or yeon geun jorim. It’s braised at low heat with rice syrup and soy sauce, creating a sweet and salty flavour. The glazed lotus root also has a unique texture, where it’s soft and chewy yet a little crispy. The glazed lotus root is also a popular side dish to include in Korean lunchboxes!

Ingredients

  • 455g of lotus roots, skinned and trimmed
  • 5ml of white or apple vinegar
  • 30ml of vegetable oil
  • 590ml of water
  • 2 cloves of garlic, minced
  • 60ml of soy sauce
  • 177ml of rice syrup or 118ml of sugar
  • 10ml of sesame oil
  • 3g of toasted sesame seeds

Lotus Root Recipe

Directions

  • Cut the lotus root into 0.6cm thick slices and soak them in a large bowl with cold water for 30 minutes.
  • Add white or apple vinegar to a large pot of boiling water and blanch the lotus roots for 5 minutes. Strain the lotus roots with a large sieve and rinse them with cold water.
  • Heat the vegetable oil in a non-stick pan and stir-fry the lotus roots until they soften and turn a little translucent.
  • Add the water, minced garlic, and soy sauce, then stir and cover. Reduce the heat and cook it for 40 minutes. Turn the lotus roots occasionally to brown them evenly.
  • Add the rice syrup or sugar and stir, then cover and simmer it for 20 minutes.
  • Increase the heat to medium, stir and braise it for 10 to 12 minutes. The braised lotus roots should be shiny, and almost all the liquid should have evaporated.
  • Remove the lotus root from the heat, stir in the sesame oil, and sprinkle with sesame seeds.

How to Choose Lotus Roots

Choose lotus roots that are smooth and since they usually have brown spots, try to choose ones with the fewest blemishes. For aesthetic reasons, we recommend selecting the really round ones to get a perfectly round glazed lotus root. Nevertheless, glazed lotus roots of all shapes are equally delicious!
