Fluffy Madeleines Recipe
Madeleines are a little more complex in comparison to other recipes, but it’s worth every ounce of effort. While many continue to debate on whether they’re considered cookies or cakes, all we know is that they’re absolutely decadent. Here’s how you make these unique scallop shell-shaped confectionaries with our madeleine recipe.
In a bowl, add eggs and sugar. Whisk on high speed with the hand mixer for 8 minutes.
Add lemon zest and vanilla extract and continue to beat until well incorporated.
In another bowl, use the whisk to combine flour, baking powder, and salt.
In two batches, add the flour mixture into the egg mixture and gently fold with a spatula.
Add ¼ of the melted butter into the batter, stirring to mix. Repeat with the rest of the melted butter.
Cover the bowl with cling wrap and chill in the fridge for 45 minutes.
Preheat the oven to 180°C.
Scoop 1 tablespoon of batter into the centre of each mould on the madeleine pan.
Bake in the oven for 10 minutes.
Remove the pan from the oven, invert it onto the counter, and transfer the madeleines to a wire rack to cool. Serve!
