  • 1 can of evaporated milk
  • 1 can of coconut milk
  • 100g of granulated sugar
  • 120g of cornflour
  • Water to dissolve the cornflour
  • 1 can of kernel corn, drained
  • Shredded cheese

Equipment

  • 1 pot
  • 1 small bowl
  • 1 9 x 13 baking dish

Directions

  • In a large pot over medium heat, combine the evaporated milk, coconut milk, and sugar and bring it to a boil.
  • Dissolve the cornflour with enough water in a small bowl.
  • Reduce the heat, gradually add the cornflour mixture while stirring, and add the kernel corn.
  • Keep stirring the mixture until it has a pudding-like consistency.
  • Transfer the mixture to an oiled baking dish and let it cool to room temperature, then chill it overnight.
  • Lastly, sprinkle the top with shredded cheese and serve cold.

Tips for the Best Maja Blanca

Mix the canned corn kernel liquid with the cornflour instead of water for a more flavourful maja blanca. Remember to gradually add the cornflour mixture while stirring to avoid any lumps. Also, constantly stir the mixture to prevent any burnt patches at the bottom of the pot. Feel free also to top the maja blanca with toasted flakes or latik!
