Mango Crepes Recipe

Ingredients

Crepes:

  • 240ml of milk
  • 50g of all-purpose flour
  • 30g of cornstarch
  • 25g of icing sugar
  • 3 medium eggs, lightly beaten
  • 2 tsp of butter, melted

Filling:

  • 300ml of whipping cream
  • ½ tsp of vanilla extract
  • ½ tsp of icing sugar
  • 2 large mangoes, peeled and cut into chunks

  • 1 measuring cup
  • 1 non-stick frying pan
  • 1 hand mixer
Mango Crepes Recipe

Directions

Crepes:

  • In a bowl, pour the milk, and sift the flour, corn starch, and icing sugar. Whisk until combined.
  • Add in the beaten eggs and melted butter, and mix.
  • Once the batter is well combined, pour it through a sieve into a measuring cup.
  • Heat a non-stick frying pan over low heat.
  • Pour a small amount of batter onto the pan, swirling it to form a thin disk.
  • When small air pockets appear under the crepe, transfer the cooked crepe onto a plate to cool. Repeat until the batter is finished.

Filling:

  • In another bowl, add the cream, vanilla extract, and icing sugar and whip using the hand mixer until it forms stiff peaks.

Assembly:

  • Lay down the crepe on a flat surface with its smooth side facing down.
  • Scoop the whipped cream onto the middle of the pancake and place one chunk of mango on top.
  • Gently fold the crepe from all four sides to form a pillow-like shape.
  • Transfer to a serving plate and serve!

Firming up the cream
