Ingredients
For Sauce
472ml of stock of your choice (chicken, beef, or vegetable)
30ml of oyster sauce
30ml of Shaoxing wine
30ml of light soy sauce
5ml of dark soy sauce
A pinch of white pepper powder

15ml of peanut or vegetable oil
450g of ground beef
1 yellow onion (minced)
4g of ginger (minced)
19g of corn flour
60ml of water
1 cup of green peas
5 large eggs
Equipment
2 small bowls
1 large non-stick pan with cover
1 whisk
Directions
Mix the stock of your choice, oyster sauce, Shaoxing wine, light soy sauce, dark soy sauce, and white pepper powder in a small bowl. Set aside.
Pour the oil into your large non-stick pan and heat it over medium heat.
Next, add the ground beef and cook it until it browns. Break the beef into smaller pieces.
Then, add the onion and ginger. Stir it occasionally and cook it until the onion softens.
Pour the sauce mixture into the pan and mix well.
Cover the pot and let it simmer for ten minutes. If the sauce has been reduced too much, you can add more broth.
Meanwhile, whisk the corn flour and water in a small bowl.
Add the peas once the beef is cooked, then slowly stir in the corn flour mixture. Mix well until it thickens.
Crack five of the large eggs on the beef and cover the pot immediately to cook the eggs – cover for two to three minutes for runny egg yolks. You can cover it longer for a more cooked egg yolk.
Once cooked, remove the pot from the heat, and serve it with rice.
