Minced pork cooked in a sweet soy sauce slurry, the dish is often served over a bowl of steamed rice and topped with an egg for creaminess, tying all the flavours together in one singular perfect bite. Ingredients

Marinade:

  • 1 tsp of sugar
  • 2 tsp of cornstarch
  • 1 tbsp of light soy sauce
  • ½ tbsp of dark soy sauce
  • ¼ tsp of white pepper powder
  • 2 tsp of cooking oil

Minced pork:

  • 1 tbsp of cornstarch
  • 1 tsp of sugar
  • 1 tbsp of light soy sauce
  • ½ tbsp of dark soy sauce
  • 100ml of water
  • 1 tbsp of cooking oil
  • 600g of ground pork
  • 5 cloves of garlic, chopped
  • 1 shallot, chopped
  • 100g of frozen peas, thawed
  • 1 tbsp of Shaoxing wine

Equipment

  • 2 bowls
  • 1 wok, or frying pan

Directions

  • In a bowl, mix the sugar, cornstarch, light soy sauce, dark soy sauce, and white pepper powder.
  • Toss in the ground pork and mix with the marinade until well combined.
  • Add oil and mix again. Set aside to let it marinate for 15 minutes.
  • In another bowl, combine the cornstarch, sugar, light and dark soy sauce, and water.
  • Heat the oil in the wok over high heat.
  • Add the marinated pork and stir-fry until it is lightly browned.
  • Turn the heat down to medium and remove the pork from the wok.
  • Add shallots and garlic into the wok and stir-fry until fragrant.
  • Increase the heat to high and add the peas in. Stir-fry for 30 seconds.
  • Pour in the Shaoxing wine and cook for another minute until the peas are soft.
  • Pour in the sauce mixture and stir to mix.
  • Reduce the heat to medium-high, add in the pork and cook for another minute.
  • Transfer to a bowl and serve!
