Steamed XO Mussels Recipe
Here is our delicious yet simple mussels recipe paired with our mushroom XO butter sauce for a savoury delight. Mussels are a great source of protein and are packed with nutrients. They are versatile ingredients that taste great whether steamed, fried, or baked. Ingredients
For Mushroom XO sauce:
1 garlic clove
1 shallot
1 ginger
1 tbsp dried shrimp
1 large red chilli
200g mixed chopped mushrooms (such as button, cup, and Swiss brown)
120g butter
1 tbsp sesame oil
1 tsp honey
1 tbsp soy sauce
2 limes, squeezed
Other ingredients:
A handful of rainbow chard
4 tbsp olive oil
1kg mussels, rinsed in saltwater to remove sand
A handful of coriander

1 frying pan

Directions
Finely mince the garlic, shallot, ginger, dried shrimp, 100g mushrooms and chilli. Set aside half of the chilli for garnish.
Heat butter and sesame oil in a frying pan and add the minced mushroom mix. Stir fry and add the minced garlic, shallot, and ginger. Cook till lightly golden.
Add honey, soy, and lime juice to the butter.
Season the rainbow chard with a little butter. Chargrill and set aside.
In a big pot, heat the olive oil, add the other 100g of sliced mushrooms and mussels, and a generous amount of the XO butter sauce. Stir and simmer on medium-high heat with the lid on. Once the mussels have opened (may take 5–8 minutes to steam), add the rainbow chard, and top with fresh chilli, lime juice and coriander.
Serve immediately.

Store your mussels in the fridge until ready to use.
Throw away any open, cracked or chipped mussels.
Remove the hairy bits (the beard) by pulling down and towards the corner of the shell.
Scrub off any remaining dirt from the shells.
Pat the mussels dry with a kitchen towel.
