Ingredients

  • 7g of active dry yeast
  • 295ml of warm milk (37°C)
  • 70g of granulated sugar, divided
  • 390g of all-purpose flour
  • 195g of bread flour
  • 8.5g of kosher salt
  • 43g of unsalted room temperature butter
  • 2 large eggs, lightly whisked
  • Breadcrumbs

Pandesal Recipe

Directions

  • Dissolve the yeast with warm milk in a small bowl and add 12g of sugar. Stir well to combine and set it aside for 5 to 10 minutes to allow the yeast to activate. The yeast mixture should be foamy.
  • Whisk the all-purpose flour, bread flour, and salt in a large bowl and set aside.
  • Pour the yeast mixture into the stand mixer bowl and fit the hook attachment to the stand mixer.
  • Add the remaining 58g of sugar, butter, and lightly whisked eggs.
  • Add the flour mixture in three batches while the mixer runs at low speed. Increase the speed to medium once all the flour has been added and continue kneading until the dough becomes a smooth ball.
  • Remove the dough and transfer it into the lightly oiled bowl. Cover it with cling wrap and let the dough rise for 1 hour at room temperature until it has doubled in size. Punch the dough down and divide it into 24 equal portions.
  • Roll each portion into balls and dip the top into breadcrumbs.
  • Line the 18 x 13 baking sheet with parchment paper and place the bread rolls in it. Cover the bread rolls with cling wrap to prevent them from drying out and let them rise for 20 to 30 minutes.
  • Preheat the oven to 176°C. Remove the cling wrap and bake the bread rolls for 20 to 25 minutes until golden brown.

Pointers for Making Pandesal

It’s normal for the pandesal dough to be sticky, so remember not to add too much flour. Adding flour will dry out the dough and cause the pandesal to be dense. The stated time for dough-rising and resting is based on the standard 22°C room temperature. If your home’s room temperature is higher, the dough will take a shorter time to rise. If it’s cooler, then it’ll take more time. Lastly, you can substitute the bread flour with all-purpose flour.
