Directions

  • In a bowl, add garlic salt, light soy sauce, and toss in the pork shoulder. Massage in the marinade for a minute.
  • In another bowl, crack and beat the egg, then pour it into the marinade. Massage for another 30 seconds.
  • Add flour into the marinated pork and coat evenly.
  • On a plate, add cornstarch and transfer the pork, one at a time, to the plate and coat.
  • In a separate bowl, add ketchup, brown sugar, vinegar, cornstarch, salt, and water. Mix until well combined.
  • In a pot over high heat, add a sufficient amount of corn oil to fully submerge the coated pork pieces.
  • For the first round of frying, carefully transfer the pork into the pot and fry for 8 minutes. Cook until the pork pieces begin to brown and crisp.
  • For the second round of frying, toss the pork pieces in for another 2 minutes. Once they are golden brown, remove them from the frying oil.
  • In the wok, add in the red, yellow, and green bell peppers along with the red and yellow onions. Cook for 30 seconds.
  • Add the pineapple chunks and cook for another 30 seconds.
  • Remove everything in the wok and set aside.
  • Add the corn oil and sauce mixture, bringing it to a light boil. Let it reduce and thicken.
  • Add the pork, vegetables, and pineapples back into the work and coat completely with the sauce.
  • Transfer to a platter and serve!

Perfecting the dish

Here are a few handy tips and tricks to keep in mind when you’re in the kitchen whipping up this sweet and sour pork recipe.

  • Double frying the pork is the key to every perfect crispy bite.
  • Remember to use cornstarch, and not cornflour. Cornstarch helps give the pork a crispier coating.
  • The longer you marinate your pork, the better the flavour.
